Banana Muffins.
Sunday, December 19, 2010 at 09:32PM This morning, I couldn't let two very ripe bananas go to waste and I decided to whip up banana muffins. A., to our somewhat-fascination and total dismay, managed to climb on our couch with hers in hand (or "on plate") and eat it. Disclaimer: we're really not in the habit of letting A. eat on the couch; it's generally prohibited, in fact, and I really can't think of when we eat while sitting on the couch in front of her (oh, wait - I'm the guilty one. I sometimes eat breakfast at the couch. Argh). But after watching her efforts at climbing this mountain, so to speak, all we could do was stare and proclaim this as a "special, one-time-only-eat-on-the-couch morning." And record (I promise, there are some funny moments in this clip).
According to A., "tastes good!" Shedding all modestly, we kinda thought so, too. For those interested, here's the easy-peasy recipe. Ingredients: 1/2 c butter; 1 c sugar; and 2 eggs, creamed together. Then, mix 1 and 1/2 c flour, 1 tsp baking soda, 1tsp salt. Add the flour mixture to the butter mixture. Add to that the 1 c of ripe, mashed banana, 1 tsp of vanilla, and 1/2 c of sour cream. Bake in greased muffin tins or lined cups for 22 minutes at 350 (that was our magic number). I found that two-heaping tablespoon scoops per cup yielded 18 muffins. Enjoy!
