Before I forget - Bisque Recipe!
Friday, December 3, 2010 at 02:44PM A few posts back, I quickly mentioned the New Orleans Corn Bisque we enjoyed during my mom's visit. I made it earlier in the week and - especially for my mom and grandma - here's the recipe (and a picture of its easy, creamy deliciousness).
Ingredients: 16oz of kielbasa, cut 1/2" pieces; 4 or 5 peeled, cooked, and 1" cubed potatoes (enough to make 2 cups or so); 1 15oz can of corn, drained; 4 cups of milk (I've used 2% and whole; both taste good); 1 medium onion, chopped; 1/4 cup of flour; 1/4 cup of butter; 1/2 teaspoon of salt; and 1/8 teaspoon of pepper (we use more and added freshly ground pepper as garnish).
Cookin': Melt butter in your soup pot. Add onion and cook until translucent. Add 1/4 cup of flour, salt, and pepper and stir constantly for 1 minute. Add milk and bring to a boil, stirring here and there. Once milk mixture is boiling, stir constantly for 1 minute. Add the kielbasa and corn and bring to a boil. Let simmer for 10 minutes. Add potatoes. Heat through. Add whatever your heart desires as a garnish. We add shredded cheese and fresh parsley (though, we were lacking that ingredient last go around), plus lots of pepper. If you have leftovers to re-heat, I recommend warming it on the stove and adding a dash of milk. Enjoy!
