Soup's On!
Wednesday, February 10, 2010 at 12:39PM I needed something to do. We needed something to eat. Blizzard 2010's recipe of the day: Potato Leek Soup. (And it's baby friendly!)
What you need: 4 or 5 potatoes, 1 parsnip, 1 stalk of celery, and 1 carrot, cooked in 6 cups of chicken broth (or, if you're me, 3 cups of chicken broth, 3 cups of water, and 1 chicken buillion cube) until soft. In batches, place potatoes, parsnip, carrot, celery, and five cups of broth (in batches) in food processor or blender. Meanwhile, saute 2 leeks (bulbs only) in 1/2 cup of butter, adding 1/4 cup of white wine. Add leek mixture to one-cup reserved broth. Add to that pureed potato mixture. Season with salt and pepper. Simmer. For fun: garnish w/ sharp cheddar and bacon. Serve with buttery, garlic-y bread. Yum.
