Tuesday, March 29, 2011 at 07:15AM Thank goodness for easy, giant, multi-meal crockpot meals that require barely any chopping and next to no measuring. The meal: slow-cooker chicken taco soup. EASY. Make it.
The recipe: 1 onion, chopped; 1 package of taco seasoning; 1 15oz can of black beans; 1 15oz can of chili beans (red beans in chili sauce); 2 10 oz cans of diced tomatoes with green chiles; 1 15oz can of corn, drained (I measured out and used frozen kernels); 1 8oz can of tomato sauce; either 12 oz of beer (any beer) or - if you're like me and have none - 12oz of chicken broth; and 3-4 chicken breasts. For garnish: sour cream, shredded cheddar, and crushed tortilla chips. Directions: um, just toss everything into the pot, except the garnish ingredients, pressing the chicken breasts down on the top of the mixture. Cook on low for 5 hours. Remove chicken, shred, cook for an additional 2 hours. Enjoy!
