Mmm, Ribs!

I recently accidentally (yes, accidentally) bought three slabs of pork spare ribs (these accidents happen when you order your groceries online, to be delivered).  What on earth would I do with three gianormous slabs of rib?  Turn 'em over to M., that's what.  M., who readily took on the challenge of preparing them, deciding ultimately to slow-cook them on his Weber grill.  

What turned out to be a delicious-smelling 3 and 1/2 hour slow-smoke of these ribs, led to the most tasty ribs I have ever had.  In my entire life. No exaggeration.  I swear.  A. agrees, too (though she spent most of her meal time on her sour-cream slathered baked potatoe, see?).

Poor E. (here, wearing her "I love daddy" onesie) is too young to partake in such a meal.  So, she stayed lean and spent time under her gym.

M. could better tell you how he prepared them.  But what I know this:  he used a good pile of coals and some woodchips soaking in water; he put a pork dry-rub on the slabs; he covered the Weber and vented it in such a way that 'smoking' occured (along with the help of the wet chips); and he checked on his babies every hour. Then, when the ribs were nearly complete, he sauced 'em.

And we ate them. Every single last one of them.  And they were delicious.  And tender.  And tasty.  And  leaving us wanting more. So next time when I order 3 giant slabs of ribs, my purchase will be no accident.
